What to Cook with Fresh Produce: Corn

Going to the Farmer’s Market is always a treat. Being outside and grabbing delicious fresh produce—could anything else be more blissful? Well, actually cooking your produce could make the situation even better. And 9 times out of 10 when I go to a Farmer’s Market, I buy produce and have no idea what I should make with it. Hence this new series 🙂

Since I’m lucky enough to live near a Farmer’s Market that stays open all year round, I am able to grab fresh in-season produce every single weekend. Right now I’m kind of determined to buy more local produce because I’m totally getting into this “supporting local” thing (*cough* thanks Brooklyn, *cough*). So I’ll be walking through my in-season produce chart and creating a new post every few weeks or so. Each post will highlight a particular produce item, and recipes to make with it during that season.

This week it’s all about corn. Now I know corn is a summer produce, but with fall only just starting some markets still have some of this produce available for purchase. So I decided to grab two ears this week and make some delicious fresh corn salsa (recipe below).
